Method
- Preheat the oven to 185°C and grease a baking tray.
- Weigh the raisins in a small dish on the lid, add warm water and soak for 5 minutes. Then drain.
- Chop the apple 3 sec / speed 4 and set aside.
- Put the vanilla quark, eggs, baking powder, cinnamon and the stevia or sugar in the bowl, 5 sec / speed 4.
- Add the apple and the drained raisins, 10 sec / speed 2.
- Add the flour and knead on dough mode / 2 min. The dough will feel sticky.
- With wet hands or an ice cream scoop, divide the dough into about 10 mounds on the baking tray.
- Bake the buns for 20 minutes at 185°C in the middle of the oven until golden brown.
Liesbeth’s tips
- Delicious with some icing sugar or extra cinnamon on top.
- Also great to make in the evening and warm up briefly in the morning.
- You can replace the raisins with cranberries or pieces of date.
- Steaming with the Varoma (after step 6): cut baking paper to size, place it in the Varoma dish and prick holes in it. Make 8 small buns and place them in the Varoma with space between them. Put 500 g water in the clean mixing bowl and steam 25 min / Varoma / speed 1. For a lightly crispy finish: 5 minutes in the oven or air fryer at 200°C, or briefly in a dry frying pan on both sides.
