Method
- Warm the water with the yeast and the sugar: 2 min / 37°C / speed 1.
- Add the flour, oil and salt and let dough mode do its work for 3 min. Shape into a ball on a lightly floured counter, cover and let the dough double in size in a warm place, about 40 minutes.
- Divide the dough into 8 equal pieces of about 100 g and roll each piece into a thin round of about 15 cm. Let the rounds prove under a tea towel for another 30 minutes or so.
- Place a frying pan with a dash of oil over medium-high heat. Cook the pitas one by one, about 2 minutes per side, gently pressing large air bubbles flat with a spatula until dark brown spots appear. Keep them warm under a cloth and serve immediately.
