Method
- Put the strawberries and sugar in the bowl and mix 5 sec / speed 6.
- Insert the butterfly whisk, add the egg white and whip 5 min / speed 3.5. Divide over glasses, garnish with a leaf of mint or basil and serve immediately.

- Serve immediately and do not put it back in the fridge, or the mousse will collapse.
